Ginger essential oil, extracted from the rhizomes of Zingiber officinale, is appreciated in cooking for its spicy, refreshing fragrance. It can be used in very small quantities to flavor dishes, sauces, marinades, desserts or drinks. A few drops are all it takes to add a spicy, invigorating note to your recipes. Because of its potency, it must be used sparingly and diluted well before use.
